I have criteria for lots of things, houses, mates, shoes, pillow inserts & the list goes on…
Not rules per se, but what I look for in something.
Same goes for party appetizers ~ yup, there is a criteria.
I bet you have party appetizer criteria too ~ maybe subconsciously…
If you have passed up a hot chicken wing, drippy shrimp or an overly an engineered tower of food on a baguette slice, even if you were starving, for fear of burning your fingers, soiling your outfit or not being able to talk after having to stuff the giant thing in your mouth in one bite, you have party appetizer criteria too.
Here is my criteria for the perfect party appetizer:
- simple to make
- easy to eat with one hand and while talking
- hardy ( this may be dinner after all )
- good for you ( don’t want to eat a week’ worth of calories in a few bites )
Greek Skewer Appetizer
My Greek Skewer Appetizer Recipe fits all my criteria!
Make them 1/2 hour before the party with time to spare. Enjoy while standing, talking, holding a glass and laughing. Eat several & you’ll feel satisfied.
Only assembly and a few slices are necessary to prepare a batch. Do make extra as they will go fast.
These appetizers won’t be passed over as they fit the criteria!
What you need:
- long toothpicks
- pitted Kalamata olives
- spinach leaves
- roasted red pepper sliced thin
- cubed feta cheese
- small squares of pita bread lightly toasted ( simply cut up a pita into bite sized pieces )
Once you all have the components ready to roll, simply thread each pick in the same order.
I placed my threaded picks on a bed of spinach for a simple and pretty presentation.
Then Pin these before I eat them all!
I am off with platter in hand! I’ll try not to eat too many in the car.
