Grilled Chicken over Spring Greens & a link party

You can feel it in the air. Spring is here, well it is here, I am sorry if it is not quite yet there, but it will be soon.

Be ready with some lighter recipes. This post and party will help put some Spring in your kitchen repertoire for sure.

I am sharing one of my favorite Springtime recipes:

Grilled Chicken over Spring Greens

Light but substantial with a zesty side dish, this recipe will satisfy even the heartiest of appetites.

My husband who doesn’t go for “just a salad” for dinner, loves this meal. Safe to say, the man is spoiled in the dinner department and he asks for this one. Dare I say, you will love it too!

Let’s get to it, shall we?

Serve warm with crusty bread & a nice dry white wine – a perfect Spring time meal – not just a salad at all!

You have to try Amy from ‘Atta Girl Says’ Grilled Flatbread Pizza.  It looks so delicious & fresh!  Is that asparagus?

Nothing says Spring like asparagus – ok maybe a few other things, but it is very Springy as veggies go.  Keep the grill on I am making one of these!

Your recipe looks absolutely delicious! I’ve seen pearl couscous but have only tried to kind the type that has a smaller grain. I love trying new recipes and yours looks perfect for spring.

Hey Paula! Thank you – my family doesn’t care for the smaller grain – too grainy I guess. It is a texture thing. The pearl couscous also known as Israeli couscous is wonderful. There are so many ways you can prepare it or even use it in soups. Have a great day!

Looks delicious, Kelly, and so healthy! Thank you for joining us today! Do you use a recipe plugin so people can print your recipe? Just a thought!

Thanks Marty! I was just commenting with another reader regarding that. She was printing out my Soda Bread recipe & I thought…oh yes I should add that plugin. On the TDL to do list.

Kelly your chicken recipe with couscous looks delightful. I have never made the pearl type only the Israeli type. Thanks for sharing.

Kelly, this looks delicious — and easy to make, too — just the kind of recipe I like to cook on a spring day when I’d rather be outside enjoying the beautiful weather. Thrilled to host the Swing into Swing spring recipes link party with you.

I am definitely adding this one to my must-make-soon list — maybe even this week!

    Hope you’re feeling better, lady.

Thanks Amy! And as I said your pizza is on my short list too. Yes much better…even managed a school field trip today!

Wonderful blog! I found it while browsing on Yahoo News. Do you have any tips on how to get listed in Yahoo News? I’ve been trying for a while but I never seem to get there! Thank you

Thank you so much Kasha! I had no idea I was listed on Yahoo News or how to get listed. Thanks for letting me know!
