I over indulge every time…
Can’t stop at just one pint.
Pint of strawberries that is…
At the farmer’s market their scent is intoxicating – who needs a pint of anything else!
Thing is, while strawberries start off as little works of art, they turn “funny” fast.
So I have bags of clean chopped berries in the freezer to last a year of smoothies.
Wanting an alternative use for these delights, I came up with a simple sauce.
…figured why not toss in Chia seeds to get more of those tiny powerhouses into our diet.
The result…
Simple Strawberry Sauce with Chia Seeds
- Three cups of strawberries cut in fourths
- One & a half tablespoons sugar – optional
- One & a half tablespoons Chia seeds
- One teaspoon vanilla

Then, put all ingredients in a sauce pan. Give a stir or two. Bring to a boil, stir and simmer 6 – 10 minutes. Let cool & pour it on!
I say the sugar is optional because it really is….the berries are sweet enough this time of year. Also, you may be watching your sugar intake like I am, or planning on pouring it over ice cream or another sweet food. The amount of sugar is your call.
The Chia seeds will plump up in the mixture which is great for the consistency of the sauce. They will not feel like poppy seeds in your mouth.
Pour it on – YES! Pour it on pancakes, waffles, yogurt, angel food cake, cheesecake, ice cream and the list goes on…
This is what I had for breakfast Greek yogurt with my strawberry sauce (a no sugar batch) with yet more chia seeds on top. I told you how good these little seeds are for you here.
My strawberry sauce with Chia seeds freezes well so make up a double batch & have it on hand into the summer.
Nice in the depth of winter too, as a reminder the Spring will come.

That looks wonderful Kelly…we have Chia Seeds in our protein/fruit shakes every morning..Now I will have to sprinkle them on my fruit and yogurt snack at night!…
I was just looking at my strawberries yesterday and willing them on! I only have a small patch but, boy, they are the absolute best straight out of the garden, aren’t they? I even have one strawberry growing in the space between a garden step and the riser to the next step, but I don’t care, it might as well grow there. I’ll just have to remember to hit it with a bit of (natural) fertiliser to give it a boost. Can’t wait for the local ones, (probably another good month away). Great idea to stick the chia seeds in the sauce. Great idea to stick them in everything possible. Chia, and flax seeds, and spirulina get put into loads of things round here, from muffins and salads to soups and smoothies. X
