Light Breaded Chicken Recipe

Standing by the stove waiting for the breaded coating to get brown & crispy.

I loved when my mom made breaded chicken. Chicken breasts coated in flour & egg and flavored bread crumbs.

We'd eat it with apple sauce and white rice.  That was then, this is now...

Dial ahead about 3... , well let's just say a few years, and you have my version of breaded chicken.

I have a standing room only audience at the stove too.

Breaded chicken is comfort food at its best.

Try my new version of this classic.

Light Breaded Chicken with Lemon Recipe

What you need:

  • Panko bread crumbs
  • 1/2 extra virgin olive oil & 1-2 tablespoon for pan
  • one lemon
  • salt & pepper to taste
  • spinach
  • wild rice mix

What you need to do:

  • pour olive oil into a shallow dish
  • pour Panko into a shallow dish
  • dip chicken piece by piece into oil and then coat with crumbs 1x
  • start cooking your fav wild rice according to directions
  • place chicken in heated pan with one tablespoon of olive oil per batch
  • cook on low-ish heat - turning once gently
  • remove once crumbs are toasty colored & keep warm
  • scrap down remaining Panko crumbs and put in a little bowl
  • swirl a bit of olive oil in pan, toss in 2 cups of washed spinach with a 1/4 cup water
  • cover spinach on low heat for a minute or two
  • Remove spinach when just wilted 
  • place sliced lemon slices on top of chicken
  • plate the rest & serve

Recipe Notes:

Chicken & rice cooking at the same time ~ start to eating, this recipe is about 20 minutes.

If they are standing by the stove getting in your way could take longer - move your audience!

After the chicken is removed from the pan & before the spinach goes in, I like to toast up an additional cup of Panko with a few drops of olive oil & dash of salt.  The crunchy crumbs taste really great sprinkled on the wild rice.

Be gentle with the Panko coating - turn with fork.

Speaking of fork, once served, tell your crew to use the back of the fork to gently push on the lemon slices to release the flavor before diving in to the meal.
