We are hosting an end of summer dinner party.
Getting a date that worked for everyone was the hardest part.
The menu was the easiest part, so I decided to share it with you.
Poolside, under the cafe lights and along with a crisp Sauvignon Blanc we will feast on…
Summer Dinner Menu
Caprese Skewers as portable appetizers – people will be mingling not sitting yet.
These are so pretty & just require assembly, no cooking ~ perfect for a hot summer evening. Get the instructions on making my caprese skewers here.
After an hour or so we’ll serve the entree ~ Grilled Chicken over Greens with Israeli Couscous.
This is my favorite summer meal. Beyond delicious, it has so many good for you components. Lean protein, dark leafy greens, colorful veggies, Omega 3s and more.

The couscous can be made in the morning.
The greens can be washed, tossed & plated shortly before the guests arrive. Then when the chicken breasts come off the grill slice & lay over the greens.
Drizzle the warm dressing over each plate & serve.
After everyone has sopped up every last drop of the delicious vinaigrette with slices of crusty baguette, we’ll light up some sparklers for the kids.
Saving a few for the top of our favorite summer dessert, Ice Cream Pie Cake. Yup, cake & pie together!
